server: add IO_BACKEND abstraction; implement a unix version of it 
this doesn't change the `create`+`run` version, but makes it possible to
create a server that doesn't use unix IOs.

There was a type: Tranfer instead of Transfer and anyway we want Accept. But Accept-encoding is not looked at for chunked.
